Happy New Year .. Dieting!

Well I know I'm 8 days behind .. but .. HAPPY NEW YEAR! Hope everyone enjoyed their day!

With every New Year i always say i'm going to lose weight, haha .. but who doesnt! Well, i joined a new gym here in good 'ol Springtown. Havent really changed my eating habits until today, only because i joined SparkPeople.com. Its a website that counts your calorie intake, excerise, etc. So today is Day 1 of eating better. Spark People also has a website called SparkRecipe.com .. LOTS of amazing looking recipes. So today I made 2 of the recipes. For supper tonight we partaked in Slow Cooker Chicken Tortilla Soup. My house smells amazing! And I must say, i was impressed! I will make it again. Now, my husband on the other hand like it, but didnt. He said all he could taste was the cumin. :( He ate cereal! Haha.

If you would like to try this amazing recipe, here is the directions. :)

Ingredients:
3 boneless, skinless chicken breasts
1 can diced tomatoes1 can enchilada sauce
1 medium onion, chopped
1 can chopped green chile peppers
3 cloves garlic, minced ( i used McCormicks Minced Garlic)
2 cups water
1 can 99% fat-free chicken broth
1 tbsp cumin
1 tbsp chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 package frozen corn (i used can corn, drained juice)1 tbsp chopped cilantro

Directions:

Combine all ingredients in a large slow cooker. Stir to combine. Cook on high 4-6 hours or low 6-8 hours. Remove chicken from soup and shred. Return chicken to soup, stir and serve.

Well, while the kids were napping i had a craving for a sweet, but trying to stick to my better eating, i went to SparkRecipes to see what kind of "dessert" i could make with what I already had here at the house. I came across, 80 Calorie Chocolate Chip Cookies .. one word describes how they came out .. FAIL!! Here is a picture of them stuck to the pan. They were hard, yet gooey. Weird i know! Needless to say, never got my sweet tooth fix. :(

yes there are 2 missing, cause i was trying to put them on the cooling rack, needless to say these are now, Trash Can cookies. :)

Tried something new...

Well, in getting ready for the NYE festivties tonight, I got on the latest craze, Pinterest and searched "Creamy Jalapeno Ranch dip" .. before I start in why I searched this dip. There is a Texas food chain here in Texas called Chuy's, lets just say AMAZING!! Well, they have this amazing dip that I must get everytime I go, which is NOT often. :( Anyways, for the NYE festivities tonight, I was told to bring a dip and a sweet. Well, I'm pretty notorious on bringing brownies..check! So i was thinking of a dip besides my normal Cheese dip, so i thought I would do a quick search to just see if I had any luck .. well I DID!!! So i gathered all the ingredients that I needed, and headed down to the local Brookshires. Came home with this, i forgot to get the jalapenos out of the fridge before taking this picture, but you get the jest.

Well anyways, i blended it all together.. Add about 1/2 cup more jalapenos then the reciepe called for but all in all.. very impressed! I have finally completed my FIRST Pinterest. :) Here is the link to the receipe..

2011

Now that 2011 is coming to an end, its time to look back. Where to start?!? Lets just say Beau & Aubrie had alot of FIRST times this year!

• I took the kids to the Children's Aquarium in Dallas. Aubrie loved all the fish, Beau not so much. He really just wasnt sure what to think... these are my favorite picture from that day!

This is the closest Beau would get to any of the windows..

And well, Aubrie found a friend that day! She did not want to get down..

• Hmm ... next, we went to San Diego in April and had a good time, well it wasnt the kids first time to fly but they did an awesome job flying. Was so proud. :) Our trip this round we didnt do much, but I took the kids to the beach where Aubrie decided to sleep the whole time. But I got my little man to get in the ocean (it was a little cold, but he was tough).

• About a month after returning home from our lil vacation, we were up visiting our neighbors that had just had a baby. We were trying to round up the kids outside, they LOVE being outside. Beau was aggervating his sister as always, somehow him and Aubrie collided, and needless to say, that was Aubrie's FIRST trip to the ER .. scared me more than here, of course! But after getting examed she was sent home with her nose still attached, just a hole in her mouth.

• Then came Fathers Day! Forrest is going to slaughter me for posting the picture but Aubrie is just WAYYYYY to cute! Dont mind her "Mopsy hair" as we call it. Its her hairstyle every morning.

• This year for our family vacation we went to Lake Murray & Turner Falls in Oklahoma. We took our camper and were able to find a spot literally on the lake front at Lake Murray. It was very nice! Beau loved it, being outdoors and all! Beau took a face dive off the cement at one point, but got right back up without a tear.

Aubrie enjoyed playing alone, she had her shovel and was going to town, if her brother cam near she would scream and/or throw dirt at him.





Then after camping out and hanging in the lake for a day, we drove up to Turner Falls, very pretty place! We had alot of fun! I hope we get to go again in 2012! Our family photo at Turner Falls (kinda blurry, but the best I have)





• In August, I took the kids down to my friend Melina's for the weekend. We went shopping (of course), but we took Beau, Aubrie & Emma Lou to the lake for the day to play. The next day we went through a drive thru zoo. Mainly had deer, interesting place but it was a fun trip for the kids. Beau enjoyed the animals that came to the window, but of course as I was taking pictures of the animals, Beau had to have a "cheese" moment.

 

after our "zoo" trip, we went back to the house and let the kids play outside in the sprinkler.. Beau & Aubrie kept trying to sit on it, lol. Needless to say they had a great weekend!

 

Emma eventually got their attention and was telling them something...

• This year the kids turned TWO!!! They had a Mickey Mouse Clubhouse themed party. I had a Mickey Mouse Bounce house reserved for the big occasion but this great weather we have in Texas kinda put a damper (literally) on the outside activity. Therefore, we had a inside party. The house had alot of people with very little space to entertain, was pretty bummed bout that. But all in all Beau & Aubrie had a good time and I thank everyone who came to celebrate with us. :)

• For Thanksgiving this year, Mopsy & I decided to take a trip to San Diego, AGAIN! :) This time we stayed for about 2 1/2 weeks. The first week there we didn't do much but shop. Except Katie & I did take the kids on their FIRST "Choo choo" ride. Beau LOVED it!

• Then the day after Thanksgiving, Forrest had is FIRST airplane ride, so he could join in our activities. :) We took the kids to their FIRST visit to Sea World.

Then the next day we took the kids to their FIRST trip to the Famous San Diego Zoo. Beau was NOT too thrilled at first.

• Almost done.... Now we are in December and have had a great year thus far! Christmas seems like it came and went to fast. This year Beau got a Home Depot Workbecnh with all the accessories from Santa.. And Ms Aubrie got herself a Kitchen from Santa. They love them both.

Well thats the year 2011 for the Lemond Family! Hope everyone had a great year as well, may 2012 be as fun, if not more. :)

Starting something new....

Well I'm going to try this blogging thing out. Keep in mind i'm not the writer, so it may be short and sweet, not make sense, or be a novel .. haha .. I figure this is a way to keep all family and friends informed on the daily life of raising twins! :) Trust me, there will be some entertaining stories! :) Hope you all enjoy.
