Happy New Year .. Dieting!

Well I know I'm 8 days behind .. but .. HAPPY NEW YEAR! Hope everyone enjoyed their day!

With every New Year i always say i'm going to lose weight, haha .. but who doesnt! Well, i joined a new gym here in good 'ol Springtown. Havent really changed my eating habits until today, only because i joined SparkPeople.com. Its a website that counts your calorie intake, excerise, etc. So today is Day 1 of eating better. Spark People also has a website called SparkRecipe.com .. LOTS of amazing looking recipes. So today I made 2 of the recipes. For supper tonight we partaked in Slow Cooker Chicken Tortilla Soup. My house smells amazing! And I must say, i was impressed! I will make it again. Now, my husband on the other hand like it, but didnt. He said all he could taste was the cumin. :( He ate cereal! Haha.


If you would like to try this amazing recipe, here is the directions. :)

Ingredients:
3 boneless, skinless chicken breasts
1 can diced tomatoes
1 can enchilada sauce
1 medium onion, chopped
1 can chopped green chile peppers
3 cloves garlic, minced ( i used McCormicks Minced Garlic)
2 cups water
1 can 99% fat-free chicken broth
1 tbsp cumin
1 tbsp chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 package frozen corn (i used can corn, drained juice)
1 tbsp chopped cilantro


Directions:
Combine all ingredients in a large slow cooker. Stir to combine. Cook on high 4-6 hours or low 6-8 hours. Remove chicken from soup and shred. Return chicken to soup, stir and serve.

Well, while the kids were napping i had a craving for a sweet, but trying to stick to my better eating, i went to SparkRecipes to see what kind of "dessert" i could make with what I already had here at the house. I came across, 80 Calorie Chocolate Chip Cookies .. one word describes how they came out .. FAIL!! Here is a picture of them stuck to the pan. They were hard, yet gooey. Weird i know! Needless to say, never got my sweet tooth fix. :(


yes there are 2 missing, cause i was trying to put them on the cooling rack, needless to say these are now, Trash Can cookies. :)
